In 1995, I suffered a near-fatal stroke in London, and was paralysed on the right side whereby I could not talk, read, write, walk, remember (short term memory was badly affected), and was confined to a wheelchair for three years until I fought to get out of it.

Now I have written my first book emphasizing a passion for travel, photography and especially cooking (albeit now with one hand). "Travels with a One-Handed Cook" is different in that I share my story as well as my collection of fabulous recipes. It is an example of triumph over adversity, with two feel-good activities: travelling and eating. I hope that somebody, anybody, who reads this book will realise that they are not alone in their life's challenges.

My travels before and after the stroke have influenced the recipes. The cookbook features dishes created with a unique perspective from South-East Asia, and Mediterranean countries including Morocco, all shown in full-colour stunning photos.

Hot on its heels, I've created a tasty sequel called "Cook, Eat, Be Happy!" which focuses on economical dishes given the current global state.

This second book includes dishes from across the menu, and since they are done by a cook who can only rely on one hand (courtesy of the stroke), they are definitely a cinch for people who can use two hands; it also includes interesting and humorous travel anecdotes, and accompanying cartoons. ... and tell somebody new about my books, and the message behind it.... You never know, what somebody, anybody, takes out of a book, ... whether it's some new ideas as to where to go on holiday.. the 'foods' that they're likely to taste around the world (checkout Cook, Eat, Be Happy!)... the pastimes that a girl who has suffered a major stroke can get up to (checkout: Travels with a One-Handed Cook): creating funny penguins on Xmas cakes, silk painting, making lotsa cool bracelets, etc... or be inspired to try 'hawker-style' cooking from my recipes.. or my scrummy desserts, which are so simple+easy bcos I've only got 1-hand to prepare and cook... or bcos as one friend said to me, "my kids want to travel as you have done before the stroke, and are still doing"... or... just getting up in the morning, and the world is a better place bcos you're there...

Wow! I was so out of the loop over November, I didn't even know about this mission until I read the blog today. You really are an inspiration. Congrats on the grant, and I hope it goes very well for you! I had wondered who Miss July was!!!!
